If you haven’t already realized it, let me now confess that
planning for this trip was heavily influenced by the New York Times and Anthony
Bourdain. In one episode of “No
Reservations,” Anthony Bourdain visits Panama City, and the scene opens with a
visit to the Mercado de Mariscos (Fish Market).
Seafood is amazing in Panama because of the access to fish from both the Pacific and Atlantic Oceans. In fact, the name Panama means “land of abundant fish.”
It was easy to spot the fish market because of the large number of birds circling around the building, hoping for scraps. We entered fairly late in the day, intentionally seeking ceviche.

We each ordered a different seafood base (corvina [sea bass] shrimp, octopus, and mixed) but the marinade was the same—lots of lime juice, seasonings, and a type of hot pepper. The platters were served with tons of red onions and a side of cooked sweet potato. It was very good and very filling!
